It seems like everyone has a friend these days who is “gluten free”. Apart from Celiac Disease which affects a relatively small number of the population, more and more people are discovering that they have an allergic reaction to gluten/wheat. Until recently, there has been little information about gluten/wheat sensitivities to resource in the media that is not grouped with Celiac Disease. However, people who experience this may not have the extreme and dangerous reaction as someone with Celiacs. There are a wide range of mild to severe reactions experienced by people who have developed a gluten/wheat intolerance. Here are just a few of the reactions but there are many more.
Many people may discover this intolerance after doing an elimination diet for at least a month. All gluten/wheat products must be completely eliminated from meals in order for the elimination diet to work. After 4 weeks of eating gluten/wheat free, slowly reintroduce it back into your diet.
